Cooking with Emiko and Koji

This two-and-a-half–hour class is an introduction to the art of fermentation. Together, we’ll learn how to make Shio-Koji and an umami-rich fermented paste using koji and salt. You’ll explore not only how to prepare these traditional ferments, but also how to cook with them to elevate everyday dishes. We’ll end by enjoying a delicious meal that highlights the flavors we’ve created.
